Slow Cooker Shredded Chicken Parmesan: An Easy Make-Ahead Dinner
By Samantha Crowley, Broker | ONE Real Estate Group at Century 21 United
Some evenings, there's nothing better than walking through the door and knowing dinner is already taken care of.
As November settles in, the days get shorter, our calendars seem to fill up, and I'm all about finding little ways to make life at home feel easier.
And a cozy, homemade dinner that practically cooks itself? That's always a win in my books.
This Slow Cooker Shredded Chicken Parmesan has all the delicious flavours of a classic Italian-inspired meal, without the breading, frying or time spent standing over the stove.
Just a handful of simple ingredients, a little prep, and a few hours in the slow cooker.

How to Make Slow Cooker Shredded Chicken Parmesan
Step 1: Prepare the chicken
Place the chicken breasts in your slow cooker. Drizzle with olive oil and season with Italian seasoning, dried basil, salt and pepper.
Step 2: Add the sauce
Scatter the diced onion and minced garlic over the chicken.
Pour the marinara sauce over everything, making sure the chicken is well coated.
Step 3: Let the slow cooker work its magic
Cover and cook on LOW for approximately 4–6 hours, or HIGH for 2–3 hours, until the chicken reaches 165°F (74°C) internally and is tender enough to shred.
Step 4: Shred and stir
Use two forks to shred the cooked chicken directly in the slow cooker.
Give everything a good stir so the chicken absorbs all that delicious tomato sauce.
Step 5: Add the cheese
Sprinkle the mozzarella and Parmesan over the chicken.
Cover for another 10–15 minutes until the cheese is beautifully melted.
Step 6: Serve and enjoy
Finish with fresh basil or parsley and serve however you like.
My Favourite Ways to Serve It
One of the best things about this recipe is how versatile it is.
Over pasta: Spoon the saucy chicken over spaghetti, penne or your favourite gluten-free pasta.
As a chicken Parm sandwich: Pile the shredded chicken onto a toasted bun for an easy lunch or casual dinner.
In a bowl: Serve with roasted vegetables and a little extra Parmesan.
As leftovers: Add it to a baked potato, make a cheesy chicken wrap or use it as a filling for stuffed peppers.
Make It Ahead for an Even Easier Evening
Here's where this recipe really shines.
The night before, prepare your onion, garlic, seasonings and cheese, then store everything covered in the refrigerator.
When you're ready to cook, add the thawed chicken and remaining ingredients to the slow cooker.
No complicated steps. No messy prep right before dinner.
And if you're cooking for a smaller household, the leftovers make the next day's lunch even easier.
Refrigerate leftovers and use within 3–4 days, or freeze for up to 3 months for best quality. Reheat thoroughly to 165°F (74°C).
A Little More Time for What Matters
I love recipes that make home feel a little more welcoming without requiring hours in the kitchen.
Whether it's a busy weeknight, dinner with family or having friends over for something casual, it's nice to have a meal that brings everyone around the table.
And sometimes, the simplest evenings turn into the best memories.
I hope this one finds its way into your regular dinner rotation!
